Have your cake and eat it too!


I am a lady who loves cake. I am also intolerant to wheat. Unfortunately I live in a world where gluten free cakes often taste pretty ropey. They seem to be oddly flavourless, which doesn’t make any sense to me, because making a cake gluten free shouldn't effect the spices, fruits, flavourings or cocoa that you add to a cake, but worst of all, they tend to be dry and mealy.

Recently I was feeling lazy but fancied some cake so I treated myself to a gluten free carrot cake from a shop with an excellent reputation for food and, to be honest, it was pretty poor. The thing was bone dry, which is difficult to do with a carrot cake because you get lots of natural moisture from the carrots. The texture was just unpleasant.

This is unacceptable to me. Just because I have a dietary requirement, doesn't mean I should have to accept sub-standard food, especially when it's possible to make cakes that taste great despite being made to suit someone's specific diet.

I can bake cakes that are:

  • gluten free

  • dairy or lactose free

  • eggless

  • low sugar or sugar free

  • vegan

  • nut free

Or any combination of those.

But the most important thing is that my free from cakes taste great and have the correct texture. I use carefully adapted recipes for the best possible cake and, in an ideal world, you should be able to serve one of my free from cakes and your guests won't spot the difference.
